It took me a long time to find a note-taking software I was happy with, but my current favourite is Logseq [1]. It doesn't have the "infinite grid of stuff" layout that you described, and it's _heavy_ (being an Electron app written in Clojure) but it really clicked with me in a way that no other note-taking / planning software has. There is also MasterPlan [2] which is a fun & quirky planning tool which does revolve around an infinite grid. It's made with game development in mind, is quite CPU hungry and is released under an Aseprite-style "source available" license... so probably not quite what you're looking for either, but I thought I'd mention it, as it immediately sprung to mind when I saw your mock-up.
