Some gemlogs do provide an atom feed (or, this is what I most
frequently encounter), but the good news is that offpunk can pretty
much subscribe to any sort of page with links, and keep an eye on any
new links that appear there, adding them to the 'tour' when you 'sync'
Most gemlogs have an 'index' file where they publish a list of all the
entries they write, so you can visit that "index page" and then
"subscribe" to it.
A couple of suggestions of gemini content places you can subscribe to
discover things:
gemini://warmedal.se/~antenna/
gemini://skyjake.fi/~Cosmos/
These are "aggregators" (people send their content here for others to
discover), and are "constantly" updated. From there, if you visit a
link, you can usually go "up" and see the gemlog index, and subscribe
directly to the ones that interest you
and, a link to the offpunk page where Ploum explains that "It takes a
bit of time to realize that you can subscribe to anything and that RSS
are not something magic but simple page written in a different
format."

I have to say: I don't fully yet understand *exactly* how "sync"
works, so maybe I'll send an email to the list at some point asking
for clarification :)

Thanks for the answer!
It’s quite basic: sync download each page in to_fetch and add them to
tour. Then download a new version of each page in subscribed lists. For
those page, it check every link: if a cached version of that link
already exist, nothing is done. If there is no cache for that link, then
the link target is downloaded *and* added to tour.
Which means that the first time a page is "synced", every single link is
added to the tour.
